IYP 2016: Lentils

Pulses are great substitutes for meat. And for people like me who really aren’t the biggest fans of meat, pulses go a long way; And this year happens to be the International Year of Pulses as was declared by the 68th UN General Assembly.

The United Nations Food and Agriculture Organization (UNFAO) was nominated to facilitate the implementation of the Year in collaboration with Governments all over the world, relevant organizations, non-governmental organizations and all other relevant stakeholders. 

The IYP aims to increase  public awareness of the nutritional benefits of pulses as part of sustainable food production aimed towards food security and nutrition. The Year intends to create a unique opportunity to encourage connections throughout the food chain that would better utilize pulse-based proteins, further global production of the pulses, better utilize crop rotations and address the challenges facing the trade of pulses.

I eat pulses at least twice a week because I like them, they are healthy and really easy to prepare. You can just boil them till they are soft, season with salt and eat them.

But here is a really simple Lentil recipe you could try. You will need:-
2 cups of Lentils
2 tomatoes, skinned
2 onions, chopped
1 clove of garlic, crushed
Ground black pepper
Ground coriander
2 Tablespoons of Vegetable oil
Salt

In a deep saucepan, boil the lentils for 30 minutes till they are soft and most of the water drained.
In a different pan, heat oil. Add onions and fry until they are a little brown. Add the tomatoes and let it cook for a minute. Add garlic, ground coriander,pepper and salt then stir.
Pour the lentils in, with the remaining water from the precooking and stir.
Cover, reduce heat and let it simmer for 10 minutes.
Serve hot or warm with any preferred accompaniments.
